This classic Italian chocolate salami is so unbelievably delicious and so simple too. It’s a no-bake recipe, which just requires some melting, mixing, chopping then leaving it to set in the fridge. You then slice the chocolate log into rounds, each slice resembling salami – hence the name!

Known as ‘salami di cioccolato’ in Italy, it’s made with butter, golden syrup, lots of melted chocolate and then whatever add-ins you like. I like pistachios, almonds, dried cranberries and Digestive biscuits, but I also added some chopped up Crunchie bars. They really add a good crunch (as the name suggests) and sweetness, which complements the rich dark chocolate.

Ingredients:

Dark chocolate – I used 70% dark chocolate but you could use semi-sweet (54%). I would avoid milk chocolate as this really will be too sweet.

Butter – salted or unsalted works.

Substitutions and Variations:

Mix ins – the world is your oyster here. You could add:

  • Peanuts, hazelnuts, pecans
  • Pretzels, salted crisps.
  • Ginger nuts, shortbread cookies, custard creams.
  • Dried apricots, sultanas, raisins, dates
  • Other chocolate bars like KitKats, Toblerone, Caramilk, white chocolate.

Make it plant based – swap for plant-based butter, use dark chocolate.

Make it gluten free – use gluten free biscuits and check the ingredients of any mix-ins you use.

Add something boozy – add a few tbsp of brandy, rum or amaretto for a boozy twist.

ONE: Melt the chocolate in a heatproof bowl over a pan of barely simmering water, stirring until melted. Once melted, add the butter and golden syrup and stir to bring together.

TWO: Once smooth, fold in the digestive biscuits, cranberries, chopped crunchie bars, pistachios, almonds, orange zest and a good pinch of salt.

THREE: Lay a large sheet of clingfilm (plastic wrap) on your counter and spoon half the mixture onto it.

FOUR: Wrap the clingfilm over and use your hands to shape the mixture into a log.

FIVE: Chill in the fridge for at least 4 hours and up to overnight. Peel off the clingfilm once firm, dust in icing sugar, then slice and enjoy!

Cooking Tips:

My chocolate salami is too soft: you may have added too much butter or you didn’t chill it long enough. Chill for another hour, then slice.

My chocolate salami is too dry and crumbles: it may have needed more butter to bind it together. Mix in 1-2 tbsp more melted butter and reshape. Make sure to really wrap it tightly in cling film to encourage it to hold.

My chocolate seized: whisk in 1-2 tbsp of boiling water and mix over a bain marie to bring it together.

Frequently Asked Questions

Can you make chocolate salami without eggs?

Most modern recipes for chocolate salami are entirely egg-free. Simply use melted chocolate, butter and golden syrup to keep it soft.

How long can chocolate salami sit out?

Because chocolate salami has butter in it, try to only leave it out of the fridge for 1-2 hours max. It also slices better if chilled so it makes sense to keep it in the fridge.

Can you freeze chocolate salami?

Chocolate salami freezes well. Wrap it tightly in baking paper, then a good wrap of cling film, then freeze for up to 3 months. Thaw overnight in the fridge for clean slices.

Ingredients 

  • 400 g dark chocolate
  • 150 g unsalted butter
  • 3 tbsp golden syrup
  • 60 g dried cranberries
  • 120g Digestive biscuits, or Graham crackers
  • 4 Crunchie bars
  • 1 tsp orange zest
  • 1/3 cup pistachios
  • 1/3 cup roasted almonds
  • Icing (powdered) sugar, for dusting

Instructions 

  • Melt the chocolate in a heatproof bowl over a pan of barely simmering water, stirring until melted. Or in short bursts in the microwave.
  • Once melted, add the butter and golden syrup and stir to bring together. The residual heat should be enough to melt it together but you can always use the bain marie again to keep it melting.
  • Once smooth, fold in the digestive biscuits, cranberries, chopped crunchie bars, pistachios, almonds, orange zest and a good pinch of salt.
  • Lay a large sheet of clingfilm (plastic wrap) on your counter and spoon half the mixture onto it. Wrap the clingfilm over and use your hands to shape the mixture into a log. Twist the overhanging edges of the cling film to tighten it into a log. Repeat with the other half for 2 medium sized salame.
  • Chill in the fridge for at least 4 hours and up to overnight. Peel off the clingfilm once firm, dust with icing sugar, then slice and enjoy!
