Chocolate Salami (Salami di Cioccolato)

This super simple recipe for Chocolate Salami is a classic aroud Christmas time to make a shareable, delicious sweet treat. It also makes a great gift!

Ingredients

  • 400 g dark chocolate
  • 150 g unsalted butter
  • 3 tbsp golden syrup
  • 60 g dried cranberries
  • 120g Digestive biscuits or Graham crackers
  • 4 Crunchie bars
  • 1 tsp orange zest
  • 1/3 cup pistachios
  • 1/3 cup roasted almonds
  • Icing (powdered) sugar for dusting

Instructions

  • Melt the chocolate in a heatproof bowl over a pan of barely simmering water, stirring until melted. Or in short bursts in the microwave.
  • Once melted, add the butter and golden syrup and stir to bring together. The residual heat should be enough to melt it together but you can always use the bain marie again to keep it melting.
  • Once smooth, fold in the digestive biscuits, cranberries, chopped crunchie bars, pistachios, almonds, orange zest and a good pinch of salt.
  • Lay a large sheet of clingfilm (plastic wrap) on your counter and spoon half the mixture onto it. Wrap the clingfilm over and use your hands to shape the mixture into a log. Twist the overhanging edges of the cling film to tighten it into a log. Repeat with the other half for 2 medium sized salame.
  • Chill in the fridge for at least 4 hours and up to overnight. Peel off the clingfilm once firm, dust with icing sugar, then slice and enjoy!

To store: store in the fridge, wrapped, for up to a week. Once sliced, the add-ins like the biscuits may lose their texture so ideally, slice as you eat!
Make ahead: you can make the chocolate salami a week in advance.

Makes 2 or 3: you could also make 3 thinner, smaller salame. Shape the logs as you like.
