Very Green Pasta Full Of Veggies
This pasta sauce is a life saver when you’re in a hurry and come home ravenous. It’s also something you can pull together with bits you find lurking in the fridge - a good old fridge forage.

For two people I blanched roughly half a bag of spinach, a handful of rocket and a handful of basil leaves (but seriously any greens you have will do - salad, herbs etc). Chuck in a couple of cloves of garlic, then whizz that up in a blender with a generous glug of good olive oil, a handful of grated Parmesan and a pinch of Maldon salt. Toss together with the cooked pasta and a splash of cooking water.
