This recipe for a delicious, elegant tarte aux figues is my go-to when I have friends round at the moment. It marries sweet ripe figs with oozy Brie, thyme and a drizzle of honey on crisp puff pastry. It’s so easy and looks so pretty on the table, perfect for autumn entertaining.

I like this recipe as a savoury twist on tarte aux figues. I know that traditionally this is a sweet recipe with frangipane and shortcrust pastry, but I couldn’t stop thinking about doing it with brie, thyme and honey alongside the figs, for that savoury sweet twist. We all know brie and figs is a great combination, and it’s so good here with crisp puff pastry. This post has a full recipe, step-by-step instructions, swaps you can make and FAQs. Puff pastry sheet – you can use store-bought or homemade. I like to use the sheets but the block would also work here if you would rather do that for this savoury tarte aux figues.

Brie – Camembert or Brie are both good options, something soft and ripe for best melting texture.

Thyme – I like fresh thyme here, just strip the leaves off with your fingers from the main sprig.

Substitutions and Variations:

Toppings: a drizzle of balsamic glaze over the baked tart adds some acidity and depth.

Cheese: burrata on top is a great addition, but a good grating of parmesan, a scattering of feta, or a dollop of ricotta would be delicious too, albeit very cheese heavy alongside the brie.

Walnuts: swap for pecans, hazelnuts, or almonds if you have them on hand.

ONE: Preheat your oven to 180°C fan/200c. Line a rectangular baking tray with parchment and unroll your puff pastry onto it. Using a sharp knife, lightly score a 1-2 cm border around the edges of the pastry, being careful not to cut through. Prick the inner section of the pastry with a fork.

TWO: Slice the figs into rounds and the brie into planks. Lay down a row of figs, then lay a row of brie, slightly overlapping the brie. Repeat until the tart is filled.

THREE: Season with salt, black pepper and a drizzle of olive oil. Then top with the leaves from the thyme sprigs and chopped walnuts.

FOUR: Brush the edges of the pastry with beaten egg for a glossy golden finish. Bake in the preheated oven for around 15-20 minutes.

Cooking Tips:

How to ensure a crisp base of this fig tart – I don’t find the pastry needs to be blind baked as a hot oven crisps it up enough. This makes it a really easy tart! Just make sure you cook the tart until golden, and keep cooking it until the base is golden.

How to get the flakiest puff pastry – Puff pastry puffs best when it’s cold. Keep it in the fridge until you’re ready to use it, and work quickly.

Don’t overload the tart – Too many toppings can weigh down the pastry and make a soggy tarte aux figues.. Keep it evenly spread.

If your figs are super juicy, pat them dry after slicing but I don’t think you should have that issue here. Just bake as instructed, although if you have a weak oven, preheating the baking tray ensures a crisp base.

  • 4-5 ripe figs
