These easy Brie and Cranberry Filo Parcels are the perfect party food for your Christmas or New Year's drinks party! A simple assemble-and-bake method for making delicious warm, melty cheese and cranberry bites, you just need to gather four simple ingredients for a sweet-and-savoury treat your guests will love!
We can't think of a better combination for a festive party treat than brie and cranberry. Here we're wrapping them in crisp, light filo pastry to make Brie and Cranberry Filo Parcels that are going to be the first thing to vanish this Christmas / New Year / Thanksgiving.

Ingredients:
Filo pastry - always use pre-made for this, life is too short to make your own filo!
Brie - nothing super fancy as you're baking it, but you still want it to taste nice.
Cranberry sauce - we use jarred for this, but homemade also works if you have some to hand.
Melted butter - it does not matter if you use salted or unsalted here.

Substitutions and Variations:
Switch to puff pastry - You can use this recipe to make puff pastry triangles instead! Switch out the filo for a sheet of all butter puff pastry, and the melted butter for egg wash.
Change up the fillings - as a general rule, any melty cheese with a texture like brie (something local might be a good option!) and any preserve that pairs well with the cheese you've picked will work well here. Apricot jam would be lovely in place of the cranberry sauce.

ONE: Slice the filo pastry sheets into even shaped squares large enough to wrap up a cube of brie. Dice the brie into bite size cubes.
TWO: Brush one filo square with butter, then place another sheet on top in a star shape. Brush with more butter then place a teaspoon of cranberry sauce in the centre.
THREE: Top with a cube of brie, wrap up and press the top to create a parcel.
FOUR: Once you have created all of your parcels place on a baking tray and brush the outsides with more butter.
FIVE: Bake in the oven for around 20 minutes at 190C until golden brown.
Cooking Tips:
Working with filo pastry - the only thing about filo pastry is that it easily dries out once you remove it from it's sealed packet. Obviously the melted butter helps with this, but to keep things nice and pliable keep a damp tea towel to hand as you work to lay over the open filo to stop it drying out.
Get ahead - You can assemble these a couple of hours ahead and keep them in the fridge before baking, just brush them with a little more melted butter before putting them in the oven.
Frequently Asked Questions
It depends on what brie you use, as some of the rennet in cheesemaking is not vegetarian. Check that it is if this matters to you!
As long as it is melty, yes! Just check your filo pastry is also vegan friendly, and use vegan butter for brushing - we've been big fans of SMUG's plant-based butter since we worked with them earlier in the year!
