Ingredients

  • 1 small knob of butter
  • 1 tbsp olive oil
  • 2 red onions halved and thinly sliced
  • 2 garlic cloves crushed
  • 8 sage leaves finely chopped
  • 28 oz butter beans drained; about 4 1/2 cups
  • 10 fl oz heavy cream (double cream) about generous 1 1/4 cups
  • 6.75 fl oz milk about scant 1 cup
  • 2 tbsp wholegrain mustard
  • 1 butternut squash peeled, seeds removed, quartered, and thinly sliced (about 2lb 2oz/950 g prepared weight)
  • 3.5 oz grated Gruyère about generous 3/4 cup
  • 1.75 oz grated cheddar about scant 1/2 cup

Instructions

  • Heat the butter and oil in a large frying pan. Add the onions and cook slowly over a low-medium heat, stirring every now and then, for 10 minutes until soft.
  • Add the garlic and sage and cook for a minute.
  • Tip in the drained butter beans, mustard, milk, and cream. Season well with salt and pepper.
  • Heat the oven to 392°F (200°C/180°C fan). In a large oven dish, spread a layer of squash, followed by half of the butter bean mix and a handful of the grated cheese.
  • Repeat with a second layer of squash, butter beans and cheese. Top it off with a final layer of squash and sprinkle over the rest of the cheese.
  • Place it in the oven for 40 minutes, by which point the cheese will be melted and golden and the squash tender. Allow to rest for 5 mins before serving.

Make-ahead and storage

To store: Keep leftovers refrigerated in an airtight container for up to 5 days. Reheat in the oven or microwave.
Make-ahead: The butternut squash gratin will not freeze well because of the cream. But you can assemble it up to a day in advance. Keep it covered and in the fridge unbaked. Add a few extra minutes to the cooking time if baking straight from cold.
