This is the simplest dessert ever. It really does celebrate simplicity at its best. It's frozen berries with a hot white chocolate sauce and it really is so good. The hot sauce melts the berries gently and creates wonderful pockets of hot and cold.

Frozen berries - I like to use a bag of mixed berries. They tend to include raspberries, blackberries and redcurrants. I would avoid strawberries as they are large and therefore can be a little too frozen for this pudding.
Double cream - this makes a perfect sauce, it keeps it nice and thick rather than too watery.
White chocolate - use good quality white chocolate with cocoa solids and not entirely sugar as this gives best flavour. Good quality white chocolate is often speckled with vanilla which is delicious in the sauce.
Substitutions and Variations
Berries: use any berries you like as long as they are frozen. Like I say, avoid strawberries as they are too large typically but using blueberries, raspberries or blackberries are all perfect.
White chocolate: you could use milk or dark chocolate for a different sauce. I prefer white chocolate with the berries but it would be good with another kind of chocolate.

The full recipe is below but the below step-by-step guide will give you a visual guide to making them.
ONE: Place the berries into a lined pudding mould or ramekin. Fold the clingfilm over and place back in the freezer to freeze together.
TWO: Gently heat the cream until just before boiling then add the chopped white chocolate. Leave for 1 minute to melt then stir until smooth.
THREE: Tip the frozen pudding moulds onto the plate and then peel back the clingfilm.
FOUR: Pour over the hot white chocolate sauce and dig in!
Cooking Tips
Heating the cream: Keep the cream on a gentle heat as you don't want it to scorch and get too hot or it'll seize the chocolate. You want to pour it on the white chocolate just before a boiling.
Freezing the berries: To ensure the berries stay together when in the mould and frozen, I find it helpful to thaw the bag of fruit slightly for 10 minutes or so, so the berries soften slightly. Then when they re-freeze through again, they all freeze together as they can be tightly packed in if a little softer.

In theory, no, as white chocolate will be delicious with any kind of berries but I love the frozen aspect with the hot white chocolate.
Yes, it would make a milk chocolate or dark chocolate sauce instead of white chocolate. This would be delicious too but different to this recipe of course!

Ingredients
- 300g double cream
- 300g white chocolate
- 1 x 1kg pack of frozen mixed berries
Instructions
- Line 4 individual pudding moulds or ramekins with clingfilm. Pour in the frozen berries into each one and pack down. Then cover with cling film and place back in the frozen to freeze together.
- To make the sauce, simply take equal quantities of double cream and white chocolate. Heat the cream gently in a pan until just before boiling and then remove from the heat and add the chopped up white chocolate.
- Keep stirring until it’s all melted. Tip a frozen pudding mould of frozen berries onto a plate and then allow each guest to pour their own white chocolate sauce over.
Notes
You could skip the frozen berries in the individual moulds and just scoop frozen berries onto a plate and top with sauce.
