Sometimes you just want a sweet treat but if you are trying to eat more wholesome, nutritious foods, this can sometimes be a little tricky. This protein chocolate mousse ticks all those boxes. It's super simple - takes under ten minutes to make and then it just needs to chill in the fridge for an hour. Unlike a classic chocolate mousse, it doesn't need to set overnight. I like to serve mine in little coupes with some fresh raspberries on top. You really can't taste the tofu, it's just a thick, rich, creamy pud. It's also accidentally vegan! Win win.
