Chicken And Coconut Soup Inspired By Amelia Freer
As a chef, I never really follow other people’s recipes.
I read cookbooks and research and experiment but I never just cook from a recipe, but I’ve decided maybe it’s something I should do a bit more of.
I want this website and my instagram page to be like the podcast, just a celebration of food and a useful place to share things that I think you will like and enjoy. I think most of the recipes will still be mine because it’s what I love doing and I’m cooking all the time and I can’t help but share. But today the recipe comes from the very lovely Amelia Freer.
In her episode or Desert Island Dishes she talked a lot about chicken and cooking lovely comforting food so I made her chicken and coconut soup this weekend and it was wonderful. Quick and easy, with lots of flavour and hearty. I followed Amelia’s advice and blended it about ¾ so there were still some chunky bits, and we mopped our bowls with sourdough. Perfect chilly weekend food. More in my stories - I’ve saved it as a highlight.
