Japanese Strawberry Sandwich

This simple yet gorgeous strawberry sandwich from Japan features pillowy-soft milk bread, whipped cream, and perfect fresh strawberries.

Ingredients

  • 18 medium-large strawberries washed and thoroughly dried
  • 200 ml double cream
  • 4 Japanese milk bread slices or thick slices of brioche or good quality white bread
  • 1 tbsp icing sugar powdered sugar

Instructions

  • Slice the crusts off 4 slices of milk bread and set aside.
  • Add the cream to a bowl and add the icing sugar. Use an electric whisk to beat it to medium peaks. You don’t want it to be soft enough to leak out the sandwich but if too firm, it turns grainy.
  • Lay one slice of milk bread on a board and then top with a good scoop of whipped cream. Smooth it into a thick layer.
  • Place whole strawberries in a straight line on the cream in the centre and then place a few more strawberries in the gaps on either side. You will likely need 9 strawberries total, per sandwich.
  • Top with more whipped cream and smooth over. Add the top slice of bread and gently press down.
  • Place the sandwich on a sheet of cling film. Then use a butter knife to smooth the cream into any large gaps between the slices of bread so you have cream right to the edges of the sandwich.
  • Wrap tightly in the cling film and refrigerate for at least an hour to firm up.
  • Slice the sandwich veritcally with a very sharp serrated knife, so it slices right through the strawberries for a pretty cross-section.

To store: The sandwich will keep in the fridge wrapped in the cling film (plastic wrap) for up to a day. The longer you chill, the firmer it will be.
Make ahead: You can make the strawberry sandwich one day in advance. Wrap tightly and store in the fridge until ready to serve. Make sure the strawberries are very dry to avoid their juices bleeding into the cream.
Milk bread: if you can't find milk bread, try thick slices of brioche or good quality white bread.
