How to make Hot Honey
Sweet with a kick, hot honey is the flavour boost you didn’t know you needed.

Servings: 1 cup
- 340 g honey 1 cup
- 2 tbsp chilli (red pepper) flakes
- 1 tsp white wine or apple cider vinegar
- 1 tsp chilli powder optional for extra heat
Add honey and red pepper flakes to a saucepan over medium-low heat. Don't let it boil, you just want it to gently simmer.
Let it gently bubble around the edges for 5-10 minutes. Stir occasionally to make sure nothing sticks to the bottom.
Remove from the heat and let sit 10-15 minutes to intensify flavour.
Pour through a fine mesh strainer into a clean jar. This is optional if you like the chunkier chilli pieces and flakes but up to you.
Cool completely, then store in a jar for up to 3 months.
To store: store in a sealed jar in a cool dry place for up to 3 months.

Garlicky hot honey: Add 1 crushed garlic clove during heating.
Smokey hot honey: Use smoked paprika or chipotle flakes along with the chilli flakes.
Citrus zing: Add orange or lemon zest when infusing for 10 minutes to intensify flavour.
Fresh chilli: I have also used fresh chilli peppers in the past. Just chop them up finely with the seeds and infuse as if dried flakes. Then strain out. This provides heat and a sharpness that makes it a little different.
