This super green orzo has all the creamy, lusciousness of a risotto without any of the faff. Super quick and easy, this whole dish is ready in less than 15 minutes. 10 minutes if you really get your skates on. This dish is one of those incidentally vegetarian dishes, the kind of thing I find myself making more of and not even really realising.

I always have orzo in the cupboard, it’s become a staple that I find I reach for on a regular basis - it’s so versatile, also v good for little ones too. You all loved this one pan tomato and mascarpone orzo which is another very quick and easy go-to supper using orzo which I can highly recommend for dinner tonight.

The garlicky mushrooms in this recipe really are the star of the show here, they are so good, I often find myself just standing in the kitchen eating them straight from the pan. We call them magic mushrooms in our house and no matter how many I cook, it never seems to be enough! My husband claims to not like mushrooms and he loves these, which says it all.
