Sticky Red Cabbage

This quick and easy, 30-minute recipe for Sticky Red Cabbage is perfect for your festive table, and also tastes delicious served alongside roasted sausages or duck. 

Ingredients

  • 800g red cabbage
  • 1 cooking apple
  • 3 tbsp caster sugar
  • 50ml red wine vinegar
  • 75g butter
  • 1/2 tsp nutmeg

Instructions

  1. Quarter the red cabbage, remove the heart and slice thinly ideally with a mandolin. Peel and dice the apple.
  2. Add both to a saucepan with half the butter, the nutmeg and a splash of water and sauté gently for around 10 minutes stirring frequently.
  3. Add the sugar and vinegar, season well and simmer for a further 5-10 minutes.
  4. Stir through the remaining butter.

Notes

You can easily make this up to 5 days ahead of the big day and gently warm it through before serving with an extra bit of butter stirred through at the end.
