This is SO good. Very easy, and quick and it’s just so delicious. I could eat this every day. Crispy pan fried chicken on a bed of braised beans with tomato and winter greens. Topped with a simple salsa verde and a very easy tarragon aioli. My idea of heaven.

I posted this on my stories and got hundreds of messages asking for the recipe so here it is. I take crumble very seriously - and normally I’m an apple crumble person with a few blackcurrants thrown in, but I was out of apples and a frozen bag of winter berries thrown into a pie dish and topped with crumble topping worked a treat.

I always cook my sliced apples for a few minutes to soften them before assembling. A little bit of sugar if they need it and a squeeze of lemon.

Then the main event, the real reason we are actually interested in crumble in the first place…THE TOPPING.

I have to admit I am more of a Chuck it all in a bowl and see how it feels kind of crumbler but I realise that’s not very helpful. So this is what I do:

Serves 4-6

500g apples, any
1tbsp caster sugar
Squeeze of lemon juice
1 handful of frozen blackcurrants, frozen raspberries or blackberries

180g plain flour
115g soft brown sugar
115g cold butter, cut into cubes
1tbsp oats

Peel and chop the apples and add a few tbsp of water to a pan and cook the apples for 5 mins until softened but not mushy. Add sugar and lemon. Pour into a pie dish. And top with the berries - I always use frozen and add as they are.

In a large bowl, add flour, sugar and butter. Use your fingers to squish the butter and rub it into the sugary flour until you end up with breadcrumb like texture. Add the oats and stir.

Pour over the apple mixture - pour a pile into the middle and then spread gently until it covers the apple to the edges.

Bake at 190 for about 30 mins.

Serve hot from the oven with FRIDGE cold double cream. Also good with ice cream or custard. ENJOY.
