The "Jennifer Aniston Salad" consists of quinoa and chickpeas, lots of herbs and a simple dressing. Very easy but very delicious.
250g cooked quinoa
1 cucumber, peeled seeded and chopped
2 tbsp chopped fresh mint
2 tbsp chopped fresh flat leaf parsley
1/2 red onion, finely diced
2 tbsp roasted and salted chopped pistachios
1 can chickpeas, drained (I like @boldbean)
80g feta, crumbled
For the dressing:
3 tbsp olive oil
juice of 1/2 lemon (approx 1 tbsp)
1/2 clove garlic crushed,
1/2 tsp honey
salt and pepper
For the dressing whisk together the olive, honey, crushed garlic and lemon juice. Season well.
In a large bowl add the cooled quinoa and the rest of salad ingredients
Pour the dressing over the salad, toss well, taste and season with salt and pepper if it needs it.
