Hot Honey Halloumi Salad With Vibrant Basil Dressing

This is such a good salad: hearty but healthy and delicious. Hot honey halloumi with crispy roasted new potatoes, lentils, tomatoes and rocket all drizzled in a creamy basil dressing. Heaven!

Ingredients

Scale

For the salad:

1 cup of pre-cooked lentils

300g new potatoes, cooked

Handful of rocket

Handful of cherry tomatoes, sliced

For the halloumi (reel here)

250g block of halloumi

3 tbsp honey

Zest and juice of 1/2 lemon

1 tbsp olive oil

A sprinkle of chilli flakes

For the dressing

1/4 cup yoghurt

1 cup fresh basil leaves,

1/2 cup Italian parsley leaves,

1 tbsp red wine vinegar

1/2 clove of garlic

1/4 cup light olive oil (not extra-virgin)

salt and pepper

Instructions

Slice the halloumi and place it in a bowl. Add the honey, lemon zest & juice, olive oil and chilli. Make sure all of the halloumi is coated in the marinade.

Leave in the fridge to marinate for a few hours.

Fry the halloumi on medium heat until golden brown on both sides. Add the remaining marinade from the bowl and allow to bubble.

Blitz together all the dressing ingredients. Taste and adjust the seasonings if needed them set aside.

On a large plate, add the potatoes, lentils, rocket, tomatoes and halloumi. Drizzle with the dressing and enjoy!
