Chicken Souvlaki Pita

For the Chicken:

  • 450g chicken breast, cut into 1-inch cubes
  • 2 tbsp fresh oregano, finely chopped
  • 3 garlic cloves, minced
  • 1 lemon, juiced
  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp flakey salt
  • Pepper to taste
  • 4 Skewers
  • 2 tsp olive oil

For the Tzatziki:

  • 1/2 a large cucumber, grated
  • 2 cups plain Greek yoghurt
  • 1 garlic clove, grated or minced
  • 1/2 lemon, juiced
  • 1 tbsp olive oil
  • salt and pepper

For the wraps:

  • 4 pitas
  • Cucumber, sliced
  • Red onion, sliced into strips
  • Tomato, sliced
  • Fresh dill

Instructions

  1. Place the chicken in a bowl with the oregano, garlic, lemon, red wine vinegar, olive oil, salt, and pepper; mix and marinate in the fridge for at least 30 minutes
  2. Mix together the ingredients for the tzatziki and set aside in the fridge
  3. Skewer the chicken on 4 skewers and then preheat a grill pan (or pan) over medium high heat; add oil and sear chicken for 4-6 mins per side until cooked through
  4. Heat pita in a lightly oiled pan over medium-high heat for 30 secs - 1 min per side then spread on a thin layer of tzatziki; add cucumber, onion, tomato, and the chicken souvlaki
  5. Top with more tzatziki and fresh dill, a squeeze of lemon juice and enjoy!
