You can make a big batch of the lentil salad and then simply pop the sweet potato in the oven and forget about it for 45 mins.

This is SO good. Very easy, and quick and it’s just so delicious. I could eat this every day. Crispy pan fried chicken on a bed of braised beans with tomato and winter greens. Topped with a simple salsa verde and a very easy tarragon aioli. My idea of heaven.
