This Date Caramel is the easiest caramel recipe you will ever make. You are just 5 ingredients and 15 minutes away from the most delicious sweet and salty spread… Be warned, it is addictive!

Ingredients

150g Medjool dates

120ml full-fat coconut milk

1/2 tsp vanilla extract

pinch of ground cinnamon

pinch of flaky sea salt

Instructions

  1. Soak the dates in boiling water for 10 minutes. 
  2. Drain and remove the stone. 
  3. Pop into a blender or food processor and add the coconut milk, vanilla extract, cinnamon and salt. Blend until smooth and creamy. 
  4. Spoon into a bowl or jar, cover and store in the fridge.

Notes

Coconut milk: opt for full-fat coconut milk for the best texture and flavour.

Serving suggestions: this is delicious spread onto slices of crisp apple or swirled through yogurt for a tasty snack or breakfast bowl.
